Why there is no market size here

Published estimates of the cooking class market disagree by more than a factor of 50. Figures that far apart are measuring different things, so none of them is used on this page.

Methods

Where the numbers come from.

The booking figures come from cooking class bookings made through FullClass. No business is named, and only shares and medians are published, never sales.

The figures cover bookings made from January 1 to October 25, 2026. Cancelled bookings, test bookings, free staff places and bookings made by the owner or staff are left out of everything except the cancellation figures.

How each figure was counted

  • Lead time is the time from when a booking was made to when the class started. Only classes that have already happened count, because late bookings for upcoming classes have not been made yet.
  • Booking times use the moment the booking was made, in the studio's local time.
  • Cancellations count bookings cancelled for any reason, for classes that have already run.
  • Fill rate is seats booked divided by the class's capacity, for public classes that have already run.
  • Private events started being booked in FullClass in August 2026, so that comparison covers August 11 to October 25, 2026 only. Order values include deposits paid and balances still due, before tax and tips. Cancelled orders are left out.

Limits

These are FullClass booking figures, not an industry average. The public classes in them run mostly on Thursdays and Fridays, which shapes the booking times. The date at the top of the page says when they were last counted.
